Meatball Parmesan – traditional meatballs smothered in a delicious marinara sauce and topped with Mozzarella and Parmesan cheese. Beautiful and delicious.

 

Meatballs are a staple at our house. I make them often and I make them many different ways. We simply love our meatballs. I decided to make these meatballs with ground pork but ground beef works as well or you can mix the two. As far as the recipe for these meatballs, it’s pretty much my generic meatballs recipe I use all the time, a couple eggs, some breadcrumbs, salt and pepper, an onion and some herbs. You can’t go wrong with meatballs.

 

Meatballs are great baked, because most of the fat from the meat is left in the pan and you end up with somewhat lean meatballs. But don’t worry about them being dry or anything, because I smothered them with this beautiful (store bought) marinara sauce I had and a bit of mozzarella cheese and Parmesan cheese.

 

They were moist, full of delicious flavor and were gone just as quickly. We served them with some roasted potatoes and a cabbage salad.
Meatball Parmesan

Prep Time: 20 minutes

Cook Time: 55 minutes

Total Time: 1 hour, 15 minutes

Meatball Parmesan

Ingredients

1 1/2 lb ground pork
1 medium onion chopped
2 eggs
1/2 cup breadcrumbs
1 tsp oregano dried
1 tsp basil dried
1/2 tsp salt or to taste
1/2 tsp pepper or to taste
1 cup marinara sauce
1 cup mozzarella cheese shredded
1/4 cup Parmesan cheese grated

Instructions

  1. Preheat oven to 375 F degrees. Spray a baking sheet with cooking oil.
  2. In a large bowl add ground pork, onion, eggs, breadcrumbs, oregano, basil and season with salt and pepper. Mix everything with your hands and form into 24 big meatballs. There should be enough for 24 meatballs. Place meatballs onto the baking sheet and place in the oven. Bake for about 35 to 40 minutes or until meatballs are cooked through.
  3. Pour half a cup of marinara sauce onto the bottom of a skillet. Arrange the meatballs in the skillet, they and top each meatball with some of the remaining marinara sauce. Cook on medium heat for about 5 minutes or until sauce is bubbly.
  4. Sprinkle meatballs with mozzarella and Parmesan cheese and place in the oven for another 5 minutes or until the cheese melts. Garnish with some extra basil if preferred.

Slow Cooker Asian Glazed Chicken is a no-fail recipe using chicken breast fillets that will have the family (especially kids) crawling to the slow cooker to peer through the glass, wanting and waiting for the slow cooker to finish. The aroma is dizzying. And the taste? The taste is out of this world. Sweet, sticky and mouth-watering: the perfect sweet and salty combination.

  • Soy sauce (please use low-sodium)
  • Oyster sauce
  • Honey (or brown sugar)

Ingredients

2 pounds (1 kg) skinless boneless chicken breasts (or chicken thighs)
1/2 cup low-sodium soy sauce (light soy)
1/3 cup oyster sauce
1/3 cup honey, (or brown sugar)
6 large garlic cloves, crushed
1 1/2 tablespoons cornstarch (cornflour)
3 tablespoons water
1/4 cup green onions/scallions sliced, to garnish
1 tablespoons sesame seeds, to garnish

Instructions

  1. Whisk together the soy sauce, oyster sauce, honey (or brown sugar) and garlic in slow cooker bowl. Place chicken into the sauce, rotating to coat. Cover and cook for 3-4 hours on high or 6-8 hours on low setting.
  2. When the sauce is simmering (in the last hour of cooking time), whisk the cornstarch and water together in a small bowl until dissolved. Stir the cornstarch mixture into the sauce; mix it through and cover again to allow to thicken and continue cooking until the chicken is just beginning to fall apart.
  3. Taste test, season with salt and pepper if desired.
  4. Serve with steamed greens and rice; garnish with sliced green onions and sesame seeds.

Perfectly Tender and Juicy Whole Oven Roasted Chicken with Lemon Garlic Rosemary Butter

Yield: SERVES 4-6

Perfectly Tender and Juicy Whole Oven Roasted Chicken with Lemon Garlic Rosemary Butter

Ingredients

1 4-5 pound chicken, at room temperature giblets and neck removed from cavity
2 onions, quartered
1 head of garlic, cut in half plus 3 garlic cloves minced
3 lemons, 2 cut in half and remaining half sliced into thin slices
4 tablespoons unsalted butter, softened
2 teaspoons grated lemon zest
2 fresh rosemary sprigs plus 1 sprig minced
Kosher salt and freshly ground pepper
½ cup white wine

Instructions

  1. Preheat the oven to 425° and position a rack in the lower third of the oven. Mix the butter with minced rosemary, 3 cloves of minced garlic, lemon zest, salt and pepper.
  2. Pat the chicken dry and rub half of the butter, garlic and lemon zest mixture under the skin and the rest over the chicken and season with salt and pepper. Generously season cavity of chicken with salt and pepper and stuff with lemon half, ½ head of garlic, 2-3 quarters of onion and 2 rosemary sprigs. Truss legs with cooking twine and tuck wings under bird.
  3. Place chicken in a roasting pan breast-side-up with the remaining onion, garlic, lemons and herbs. Add ½ cup of white wine. Roast for 30 minutes or until the breast is firm and just beginning to brown in spots. Using tongs, turn the chicken breast-down, baste with juices and roast for 20 minutes longer, until the skin is lightly browned. Using tongs, turn the chicken breast-side-up and baste again. Add ½ cup of water if wine has evaporated. Roast for about 20 minutes longer, until an instant-read thermometer inserted in the inner thigh registers 155° to 160° and juices are running clear.
  4. Transfer the bird to a cutting board and tent with foil. Remove aromatics and vegetables from the cavity, carve the chicken and serve.

I just made these amazing Chicken Thighs with Creamy Mushroom Sauce – a super easy recipe – perfect for busy weeknights! It takes only 35 minutes from start to finish, and you’ll love moist and juicy chicken thighs (with crispy skin!) infused with herbal flavors in a creamy deliciousness!

I’ve made 2 small changes. First, I doubled the creamy sauce. And, second, I made this recipe gluten free by using gluten free flour (the recipe calls for only 1 tablespoon of flour).

 

 

 

The recipe is made in just a few simple steps. First, brown the chicken thighs, the skin side down, in a skillet, until golden brown:

Then, remove the chicken from the skillet, and cook the mushrooms, in the same skillet:

 

 

 

Add the rest of the ingredients to the mushrooms to make the delicious creamy sauce (while the chicken thighs are baked in the oven):

Spoon the sauce over the chicken (after it’s been completely cooked through in the oven), and your dish is ready!

 

 

 

 

– I used only 4 chicken thighs and kept the amounts of the sauce ingredients the same. So, if I were to make 8 chicken thighs, I would double the sauce!

 

 

 

– When it was time to bake the chicken, I transferred chicken thighs to foil-lined baking pan and baked the chicken like that (not in the skillet). In the mean time, while chicken was baking in the oven, I made the mushroom sauce in the same skillet where I first browned the chicken – it definitely saved me a lot of time, and made it a truly 30-minute dinner!

 

– Finally, I made this recipe gluten free by using gluten free flour (the recipe calls for only 1 tablespoon of flour – the flour is needed just to thicken the sauce).

Chicken Thighs with Creamy Mushroom Sauce

Chicken Thighs with Creamy Mushroom Sauce

Ingredients

chicken thighs (about 4 pounds), skin on
1/4
teaspoon kosher salt
1/8
teaspoon black pepper

tablespoons snipped fresh rosemary

tablespoons snipped fresh thyme
1
tablespoon extra-virgin olive oil
8
ounces fresh button or cremini mushrooms, halved and/or quartered
1
tablespoon all-purpose flour
1
cup chicken broth
1/2
cup dry white wine or chicken broth
2
tablespoons Dijon-style mustard
1
tablespoon snipped flat-leaf Italian parsley

Instructions

  1. Preheat oven to 400 degrees F. Season chicken on both sides with salt, pepper, 1 tablespoon of the rosemary, and 1 tablespoon of the thyme. Heat the olive oil over medium heat in a 12-inch cast iron skillet or very large oven-going skillet. Add chicken, skin side down, to the hot oil and cook for 5 to 7 minutes until browned on one side. Turn chicken pieces over and place skillet into the oven for 15 to 20 minutes or until done (at least 170 degrees F).
  2. Remove chicken from skillet and set aside. Add mushrooms to skillet and turn heat to medium-high; cook stirring occasionally for 4 minutes. Add flour to skillet, stirring to coat. Stir in chicken broth, wine, and mustard. Cook and stir until thickened and bubbly. Cook and stir 1 minute more. Remove skillet from heat and add remaining rosemary, thyme, and parsley. Serve mushrooms sauce over chicken.
